- 1 1/2 cups 1:1 gluten free flour with xanthan gum
- 1/2 tsp salt
- 1/2 cup butter or dairy free butter
- 4 tbsp milk of choice
Pecan Pie Filling:
- 1 cup sugar
- 1 cup maple syrup or corn syrup
- 2 tbsp butter or dairy free butter melted and cooled
- 3 large eggs room temperature
- 1 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 cups pecans chopped
Instructions To Make Gluten Free Pecan Pie
Crust:
- Preheat your oven to 350 degrees F and spray a standard pie dish with non stick spray, set aside.
- In a large bowl, whisk together your gluten free flour and salt.
- Using your clean hands, mix in your butter (squishing it with your hands). Until you have a course texture.
- Add in your milk and mix it with your hands again. Knead until you have a dough ball.
- Place a piece of parchment paper on your counter and place your dough ball on that, top with another piece of parchment paper.
- Roll your dough in to a 10 inch circle, peel off the top piece of parchment paper and flip your dough in to your prepared pie dish. Press into your dish and cut off any excess. Set aside.
Pie filling:
- In a medium bowl, whisk together your sugar, maple syrup, butter, eggs, vanilla extract, and salt until combined.
- Fold in your chopped pecans.
- Pour your filling in to your prepared crust, place your pie dish on top of a baking sheet and bake for 45-50 minutes, or until the pie does not jiggle. Allow to cool completely before serving, enjoy!
