INGREDIENTS YOU NEED
- 1 cup unsalted butter room temperature
- 2/3 cup sugar
- 1/3 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all purpose flour OR 1:1 gluten free flour with xanthan gum
- 1/2 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips
- 24 soft caramel candy squares
Instructions To Make Chocolate Caramel Cookies
- In a large bowl, beat your butter, sugar, and brown sugar until fluffy. Mix in your egg and vanilla extract.
- In a separate medium sized bowl, whisk together your flour, cocoa powder, baking soda, and salt until combined.
- Slowly add your flour mix into your butter and sugar mix, until fully combined. Fold in your chocolate chips.
- Chill your cookie dough in the fridge for 1 hour.
- Preheat your oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
- Roll 2-3 tbs of cookie dough into a ball and break it in half, place your unwrapped caramel in the center of one piece and top with the other piece. Place on your cookie sheet. Continue this with all of your cookie dough. Placing at least 3 inches apart on your baking sheet.
- Bake for 10-12 minutes. Allow to cool on your baking sheet for at least 5 minutes before transferring to a wire cooling rack to completely cool. Enjoy!
