Summer is here and these recipes are sure to keep you refreshed: healthy strawberry cream pie and healthy key lime cookies. The first time I ever had a freshly made watermelon juice was YEARS ago in Mexico, and I have literally dreamt about it ever since. It was the best beverage I every had! My resort had it labelled as watermelon water and I have tried to replicate it multiple times and have been unsuccessful, bit I would say that this recipe is about as close as I am going to get. After all, our fruit here won’t be as fresh as theirs was. My boyfriend and I drank that watermelon water every single day for a week straight and still talk about it to this day. Watermelon has always been my favorite fruit and I will be enjoying this watermelon juice recipe for weeks to come!

INGREDIENTS YOU NEED TO MAKE KETO WATERMELON JUICE

  • 8 cups watermelon chunks (seeds removed)
  • 2 tbs fresh mint leaves
  • 1/2 cup fresh squeezed lime juice
  • Optional: If you prefer a sweeter drink, 1/4 cup monk fruit or sweetener of choice
  • 2 cups sparkling or flat water (you could even use a watermelon sparking water)
  • Optional: 1/2 cup to 1 cup vodka

Instructions To Make Watermelon Juice

  1. Blend together all of your ingredients until smooth.
  2. Strain to remove any solids using a fine mesh strainer.
  3. Serve and enjoy!

Ingredients
  

  • 8 cups watermelon chunks (seeds removed)
  • 2 tbsp fresh mint leaves
  • 1/2 cup fresh squeezed lime juice
  • 1/4 cup monk fruit or granulated sweetener of choice
  • 2 cups sparkling or flat water (you could even use a watermelon sparking water)
  • optional: Vodka, to taste

Instructions
 

  • Place all of your ingredients into a blender and blend until smooth
  • Pour mixture through a sieve to get rid of any watermelon pulp and enjoy!
