Summer is here and these recipes are sure to keep you refreshed: healthy strawberry cream pie and healthy key lime cookies. The first time I ever had a freshly made watermelon juice was YEARS ago in Mexico, and I have literally dreamt about it ever since. It was the best beverage I every had! My resort had it labelled as watermelon water and I have tried to replicate it multiple times and have been unsuccessful, bit I would say that this recipe is about as close as I am going to get. After all, our fruit here won’t be as fresh as theirs was. My boyfriend and I drank that watermelon water every single day for a week straight and still talk about it to this day. Watermelon has always been my favorite fruit and I will be enjoying this watermelon juice recipe for weeks to come!

INGREDIENTS YOU NEED TO MAKE KETO WATERMELON JUICE
- 8 cups watermelon chunks (seeds removed)
- 2 tbs fresh mint leaves
- 1/2 cup fresh squeezed lime juice
- Optional: If you prefer a sweeter drink, 1/4 cup monk fruit or sweetener of choice
- 2 cups sparkling or flat water (you could even use a watermelon sparking water)
- Optional: 1/2 cup to 1 cup vodka

Instructions To Make Watermelon Juice
- Blend together all of your ingredients until smooth.
- Strain to remove any solids using a fine mesh strainer.
- Serve and enjoy!
