This horchata recipe pairs amazingly with some homemade vanilla extract and if you like this you will also like this keto dairy free baileys! I have always loved horchata and I remember the first time I ever had it on a trip to Mexico, my entire world changed! I order it every time we are in a Mexican restaurant and can’t get enough! Naturally, as I like to do, I had to try to make a healthier version for my peeps with allergies or diet restrictions. I very much enjoy this version and make it all the time, although I will still order the classic version if I am in a restaurant!

INGREDIENTS YOU NEED TO MAKE KETO HORCHATA

  • 3 cups unsweetened almond milk
  • 6 tbs heavy cream or full fat coconut milk for dairy free/vegan
  • 1/2 – 3/4 cup monk fruit, depending on how sweet you like it
  • 3 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • Optional: Rum, to taste

  1. Place all of your ingredients in a blender and blend until nice and smooth.
  2. Pour over ice and enjoy!
