Cookies are the best! You will also love these keto peanut butter cookies and sugar free chocolate chip cookies! Of course, I am ALL about these healthy monster cookies right now! Monster cookies have always been one of my favorite cookies of all time – I mean, how can you go wrong? Monster cookies are also fun to make because you can pretty through what you want in them from coconut to nuts to chocolate to anything your heart desires! At least, that is what I believe! This recipe is a serious crowd pleaser and I just know you will love this recipe as much as I do and everyone around me does!

INGREDIENTS YOU NEED FOR SUGAR FREE MONSTER COOKIES

  • 1 cup smooth natural peanut butter
  • 2 tbs melted unsalted butter
  • 2/3 cup sugar free brown sugar replacement
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup gluten free rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 cup sugar free chocolate chips
  • 1/2 cup sugar free candy coated chocolates, I used Atkins brand

How To Make Gluten Free Monster Cookies

  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat, set aside.
  2. In a large bowl, mix together your peanut butter, butter, brown sugar replacement, eggs, and vanilla extract until well combined.
  3. Add in your oats, baking soda, and cinnamon and mix together until well incorporated.
  4. Now mix in your chocolate chip and candy coated chocolate until everything is mixed together.
  5. Using a large cookie scoop, place your cookie dough on your prepared baking sheet and slightly flatten – they won’t spread much in the oven.
  6. Bake for 10-13 minutes and allow to cool on your baking sheet for at least 5 minutes before transferring to a wire cooling rack to cool completely and enjoy!
