- 1/2 cup unsalted butter room temperature
- 1/3 cup monk fruit or granulated sweetener of choice
- 2/3 cup swerve brown sugar
- 2 tsp vanilla extract
- 1 large egg
- 1 cup almond flour
- 1 1/2 cups gluten free rolled oats
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar free chocolate chips

- Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat and set aside.
- Cream together your butter, monk fruit, and brown sugar replacement. Add in your vanilla extract and egg, whisk together until combined.
- In a separate bowl, whisk together your almond flour, oats, baking soda, and salt. Slowly add into your butter mixture until everything is fully combined.
- Fold in your chocolate chips.

These were really good but I needed to add a little cinnamon. Something about cinnamon in oatmeal cookies make the day much better.ðŸ«

A dash of cinnamon is perfect in these cookies! Unfortunately it is hard for me to know what went wrong, it could be something as simple as the butter being too warm, or the brand of ingredients used. Next time you add a little bit more almond flour and see how it goes.

Way too many chocolate chips for this amount of dough. I used 1/3 of a cup and added 1/4 cup coconut flour and 1/2 tsp of xanthum gum for more rose.
