Delicious and easy to make baked Strawberry Donuts. Packed with fresh strawberries and topped with a strawberry glaze and a gluten free option.

Homemade donuts are always so delicious, especially when they are packed with a ton of strawberry flavor – which happens to be one of my favorite fruits. This recipe is always a winner when I make it for anyone, and the gluten free option is just as good as the regular – and everyone that is gluten free knows how big of a win that is! I just know you are going to love these donuts just as much as I do, and they are super easy to make without any deep frying.

INGREDIENTS YOU NEED
- 1 cup fresh strawberries minced
- 2 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
- 1 1/4 cups sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 6 tbsp unsalted butter melted
- 2 large eggs
- 1 cup milk of choice room temperature
- 1 1/2 tsp vanilla extract
Strawberry Glaze:
- 1 1/2 cups powdered sugar
- 2 tbsp milk of choice
- 1 tsp vanilla extract
- 2 tbsp strawberries minced and crushed

Instructions To Make Strawberry Donuts
- Preheat your oven to 350 degrees F and spray a 12 silicone donut pan with non stick spray and set aside.
- After mincing 1 cup of fresh (or thawed) strawberries, place them on a paper towel and pat to remove any excess moisture. Then place them in a small bowl and toss with 2 tablespoons of flour. Set aside.
- In a medium bowl, whisk together your 2 cups of flour, sugar, baking powder, salt and set aside.
- Then in a large bowl, whisk together your melted butter, eggs, milk, and vanilla extract until combined.
- Add your bowl of dry ingredients into the wet ingredients and whisk until combined.
- Fold the flour coated strawberries into your batter.
- Fill your donut pan about 3/4 full with your donut batter. Bake in your preheated oven for 10 – 12 minutes. Allow to cool in the donut pan for at least 8 minutes and then carefully transfer to a wire cooling rack to cool completley.
- Prepare your glaze by mixing all of your ingredients together, adding 1 tbsp of milk at a time until you have your desired consistency.
- Dip the tops of your cooled donuts into your glaze, and place donut back on your cooling rack to allow the icing to set. Once set, enjoy!
