This Vegan Gelato is the most delicious thing you will ever have. You can add in your favorite flavors as well to this base recipe.

This recipe is absolute perfection and so customizable, you can add in any flavor extracts, cocoa powder, or fruits of your choice! I personally am obsessed with this base vanilla recipe but that is because I am a big vanilla flavor girl. Don’t come at me, vanilla is delicious. I actually make my own vanilla extract and I highly recommend that you do the same, it makes a world of difference in this recipe!

INGREDIENTS YOU NEED

  • 3 cups full fat coconut milk
  • 3/4 cup sugar
  • 2 tbsp cornstarch
  • 2 tsp vanilla extract OR 1 vanilla bean pod, scraped out

Instructions To Make Vegan Gelato

  1. In a saucepan over medium heat, whisk together your coconut milk, sugar, cornstarch, and vanilla/vanilla bean pods. Bring to a boil, whisking constantly. Lower the heat and simmer until the mixture thickens slightly, about 5 minutes.
  2. Remove from the heat and allow to cool to room temperature. Refrigerate for 4 hours, or preferably overnight.
  3. Once cool your are if making a fruit-flavored gelato, whisk in 2 cups of a fruit puree of your choice in to your vanilla gelato base.
  4. Pour into the bowl of your ice cream maker and churn according to the manufacturer’s instructions.
  5. Place in a loaf pan and cover with plastic wrap to store in your freezer. Enjoy!
