These peanut butter cups are so amazing! Even better than their regular non vegan counterparts, and made with even better whole ingredients that you can pronounce – does it get any better than that? I love to keep these on hand in my fridge for anytime I get a peanut butter and chocolate craving, this recipe even freezes well to keep them for longer. Although, they are so good that I have never had to freeze them – I will only do that if I am giving them away because I don’t like frozen chocolate so I won’t eat them.

INGREDIENTS YOU NEED
- 1/2 cup natural peanut butter
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 1/4 cups vegan chocolate chips
- 1 tsp coconut oil to help chocolate set
Instructions To Make Vegan Peanut Butter Cups
- In a medium bowl mix together your peanut butter, powdered sugar, and vanilla extract.
- In a microwave safe dish, melt your chocolate chips and coconut oil together in 30 second increments, stirring in between, until melted and smooth.
- Assemble your vegan peanut butter cups by using cupcake liners. Add enough chocolate to the cupcake liners to just cover the bottom.
- Take a small piece of the peanut butter mixture and form a disc that is just smaller than the mold so that there is room for chocolate to go around the edges. Pop the peanut butter discs over top of your chocolate in the liners.
- Pour more chocolate overtop so that the chocolate goes around the sides of peanut butter dough and covers the top. Repeat until you run out of chocolate and peanut butter dough. Place in your fridge for about 10 minutes for chocolate to set, and enjoy!
