Truffles are perfect for any occasion or holiday and make a perfectly delicious little gift. Even better when they are made vegan to suit multiple different dietary needs, so go ahead and treat yourself and your friends! I made these truffles this year for Christmas and they were a serious hit, no one even believed me that they were one of my vegan recipes – which is always a compliment in my book. Of course, vegan can always be delicious but some of the people surround me can be hard to convince, well this recipe convinced them! So let’s get to making some super easy truffles.

INGREDIENTS YOU NEED

  • 1 1/4 cups vegan dark chocolate very finely chopped
  • 7 tbsp full fat coconut milk shake can well
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder

Instructions To Make Vegan Truffles

  1. Place your chocolate in a medium-sized mixing bowl.
  2. In a separate small microwave safe mixing bowl, add in your coconut milk and microwave until warm but not boiling – around 20-30 seconds.
  3. Immediately add your warm coconut milk to the chopped chocolate and loosely cover with a cooking lid or towel to trap the heat in. Leave for 5 minutes. After 5 minutes, lift the cover and use a mixing spoon to gently stir. Continue stirring until completely melted and smooth.
  4. Stir in your vanilla extract.
  5. Set your chocolate mixture in your refrigerator to chill uncovered for 2-3 hours, or until almost completely solid all the way through. You can use a knife to test this by dipping the edge of your knife into the chocolate mixture, it should come out mostly clean.
  6. Once chilled and firm, prepare a small dish of cocoa powder for rolling. Measure out one tbsp-sized scoop, then use your hands to gently but quickly roll the chocolate into balls.
  7. Toss in your cacao powder to coat and shake off excess, then set on a parchment-lined serving dish. Continue until all chocolate is scooped. Store covered in the fridge, enjoy!
