INGREDIENTS YOU NEED

  • 2/3 cup brown sugar
  • 1/4 cup sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1/2 cup unsalted butter melted
  • 1 cup all purpose flour OR 1:1 gluten free flour with xanthan gum
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 1/2 cups blueberry jam
Crumble Topping:
  • 1/4 cup all purpose flour OR 1:1 gluten free flour with xanthan gum
  • 1 tbsp sugar
  • 1 tbsp brown sugar
  • 2 tbsp unsalted butter melted

Instructions To Make Blueberry Blondies

  1. Preheat your oven to 350 degrees F and line a 8×8 baking pan with parchment paper, set aside.
  2. In a medium bowl make your crumble topping by combining the flour, sugar, brown sugar, and melted butter until crumbs form. Chill in the fridge until ready to use. 
  3. In a large bowl, whisk together your brown sugar, sugar, egg, and vanilla extract until light and fluffy, about 1 minute. Then whisk in the melted butter. Once combined, fold in your flour, baking powder, and salt.
  4. Evenly spread your batter in your prepared baking pan. Top with an even layer of your blueberry jam. Sprinkle your crumble topping over top of the blueberry jam.
  5. Bake for 28-30 minutes, or until the edges are golden brown and the middle a bit puffy.
  6. Allow to cool in your baking pan for at least 15 minutes before transferring to a cooling rack. Enjoy!
