- 1 1/4 cup all purpose flour OR 1:1 gluten free flour with xanthan gum
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter room temperature
- 1 cup chocolate chips
- 2 large eggs
- 3/4 cup brown sugar
- 1/4 cup sugar
- 1 tsp vanilla extract
Topping:
- 3/4 cup chocolate chips
- 1/4 cup heavy cream
- 2/3 cup candy coated chocolates
Instructions To Make Cosmic Brownie Cookies
- Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, set aside.
- In a bowl, whisk together your flour, cocoa powder, baking powder and salt. Set aside.
- In a microwave safe dish, melt your butter and chocolate chips in 30 second increments. Stirring in between.
- Beat together your eggs, vanilla, sugar and brown sugar using a electric mixer. Beat on medium-high speed for 3-5 minutes or until the mixture is light, airy, and fluffy.
- Gently fold in you butter and chocolate mix. Now fold in your flour mix. Only mix until just combined, do not overmix.
- Using a large cookie scoop, drop the batter of cookie dough balls onto your prepared baking sheet, leaving about 2 inches in between each cookie, and bake for 12 minutes.
- Allow cookies to cool on the cookie sheet for at least 10 minutes before transferring to a wire cooling rack. Once your cookies have cooled completely make your topping.
Topping:
- In a microwave safe bowl add your chocolate chips and the heavy cream. Microwave in 30 second increments, stirring in between each time. Continue this process until the chocolate ganache is fully melted and smooth.
- Scoop out about 2 teaspoons of the chocolate ganache on top of your brownie cookies and sprinkle with your rainbow chocolate candies. Enjoy!
