INGREDIENTS YOU NEED
Dough:
- 2 1/2 cups gluten free all purpose flour WITH xanthan gum
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1 3/4 cups nonfat plain greek yogurt
- 1/3 cup warm water
- 1 tsp vanilla extract
Cinnamon Sugar Mix:
- 1 cup sugar
- 1 tbsp ground cinnamon
- 6 tbsp unsalted butter melted
- 1/2 tsp vanilla extract
Glaze:
- 3/4 cup powdered sugar
- 3-4 tbsp milk of choice
Instructions To Make Gluten-Free Monkey Bread
- Preheat your oven to 350 degrees F and line a standard 9×5 inch loaf pan with parchment paper, making sure that some of the paper extends over the edges of the pan. Set aside.
- In a large bowl, place your flour, baking powder, and salt. Whisk to combine. Add in your yogurt and 3 tablespoons of warm water. Mix until the dough holds together well.
- Turn the dough out onto a lightly floured surface, sprinkle lightly with more flour, and knead it with your hands until the dough is a bit smoother. Using a rolling pin, roll the dough into a rectangle about 1-inch thick. Using a small round cookie cutter about 1-inch in diameter, cut out rounds of dough. Do not pack the dough or roll the pieces into a ball. Repeat with remaining dough until all is used.
- Place your sugar and cinnamon in a bowl, and mix to combine well. Place each of the pieces of dough in the melted butter, remove with the tines of a fork to allow excess butter to drip off and place in the bowl of cinnamon sugar. Toss to coat and place in the prepared loaf pan. Create a single, even layer of prepared balls of dough on the bottom of the loaf pan, without packing them in, and build up until you reach the top of the loaf pan. Press down gently on the dough in your pan.
- Bake until lightly golden brown, around 25 minutes. Remove from your oven and allow to cool completely before glazing.
- When ready to glaze, mix together your glaze ingredients until smooth and generously drizzle over top of monkey bread. Alternatively, you can leave your glaze in a bowl and use it as a dip for your bread. Enjoy!
