This Healthy Sugar Free, Egg Free, keto Vanilla Ice Cream is decadently creamy! You’d never guess this is a healthier ice cream recipe. It tastes just as delicious as the sugar-laden original and is extremely easy to make.

I love this vanilla bean ice cream on top of a cinnamon waffle, healthy brownies, or using chocolate chip cookies for a homemade ice cream sandwich! Everyone knows I am a fiend for ice cream and this flavor has always been my favorite! Needless to say, this tub of ice cream did not even last a week in my house. Sorry, not sorry.
INGREDIENTS YOU NEED TO MAKE SUGAR FREE VANILLA ICE CREAM
- 2 cups heavy cream
- 2 cups milk (I used 2%) OR full fat coconut milk for keto
- 3/4 cup powdered monk fruit
- 1 tsp vanilla extract
- 1 vanilla bean pod OR another tsp of vanilla extract

Instructions To Make Keto Vanilla Ice Cream
- In a bowl, whisk together all of your ingredients until all incorporated together. If using vanilla bean, open one pod and scrape out vanilla beans into bowl.
- Make your ice cream as directed from your ice cream maker. I used a kitchen aid mixer ice cream bowl and mixed for 25 minutes.
- Store in an airtight container in your freezer – enjoy!

Absolutely! The texture will be more of a soft serve ice cream and very yummy! Once it has settled in your freezer the texture is more like an old fashion ice cream.
Vodka will keep your homemade ice cream from freezing solid when it is in your freezer, so you can still scoop it! If you don’t want to use vodka, just leave your ice cream out on the counter for about 20-25 minutes before scooping.
