INGREDIENTS YOU NEED
Birthday Layer:
- 8 oz cream cheese room temperature
- 1 large egg room temperature
- 1 large egg yolk room temperature
- 1/2 cup white birthday cake powder mix gluten free mix if needed
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 3 tbsp rainbow sprinkles or as many as desired
Brownie Layer:
- 1/2 cup unsalted butter melted
- 3/4 cup sugar
- 1/2 cup brown sugar packed
- 2 large eggs room temperature
- 1 1/2 tsp vanilla extract
- 3/4 cup all purpose flour OR 1:1 gluten free flour with xanthan gum
- 1/2 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions To Make Birthday Brownies
Birthday Layer:
- Preheat your oven to 350 degrees F and spray with non stick spray and line a 8×8 baking dish with parchment paper and set aside.
- Place the cream cheese, egg, egg yolk, cake mix, sugar, and vanilla in a medium bowl. Whisk until smooth, scraping down the sides of the bowl as needed. Mix in your rainbow sprinkles and set aside.
Brownie Layer:
- In a large bowl mix together your melted butter, vanilla extract, sugar and brown sugar until combined.
- Mix in your eggs, one at a time.
- In a separate medium sized bowl whisk together your flour, cocoa powder, baking soda and salt and whisk together.
- Slowly add your flour mixture to the wet ingredients and mix until fully combined and smooth.
- Evenly spread half of your brownie batter into your prepared pan. Use an rubber spatula to spread the birthday layer over top of your brownie batter.
- Place your remaining brownie batter over the birthday layer, then carefully spread it out. Use a butter knife to swirl the batter and the filling together slightly.
- Bake your brownies for 30-35 minutes, or until a toothpick inserted into the center comes out just clean, it should have some crumbs. The center can still be a little jiggly.
- Allow your brownies to cool to room temperature, slice and enjoy!
